The Crumb Stash: Seared Tuna Salad

Seared Tuna Salad

ingredients:

2 – 8oz. good quality tuna steaks

mixed greens

1 ripe mango

1 ripe avocado

a handful of cherry tomatoes

2 TBS. seasoned rice wine vinegar

2 TBS. good extra virgin olive oil

directions:

1.  season the tuna steaks with salt and pepper.  sear both sides on a hot pan or grill, about 2 minutes on each side – you want the center to remain rare.  let rest for a few minutes and slice across the grain

2.  halve the avocado, remove pit, scoop out the flesh and cut into 1 inch dice; same with the mango.  halve the cherry tomatoes

3.  mix the rice wine vinegar and olive oil to make the dressing.

4.  divide the greens between 2 large plates or bowls.  divide the avocado, mango and tomatoes and dress with the olive oil vinegar concoction.

5.  top with sliced tuna.  a few grinds of pepper and it’s chow time!
